The recipe of the week: “Spaghetti with robiola, aromatic herbs and saffron

“Spahetti with robiola, aromatic herbs and saffron” is a  very easy recipe that you can prepare in little time.  It is a delicious first course that reminds the piedmontese cooking tradition with his  soft cheese (robiola) that is produced only in the area of Langhe. Serves 4

Ingredients

320 gr. spaghetti
110 gr. robiola
2 sachets of saffron
2 cloves of garlic
a little bunch of aromatic herbs (marjoram, rosemary, salvia and parsely)
Extra virgin olive oil
salt

Wash and mince the aromatic herbs. Cook the spaghetti in boiling salted water. Meanwhile press cloves of garlic without peeling. Put them in a pan with 2 spoons oil and then take them out.  Join the aromatic herbs and brown a little.  In a little boiling water dissolve saffron and then put it in the pan. Now join robiola  in little cubes and mix all ingredients. Drain the pasta al dente and join it to the sauce. Flavour for some moment with high flame and serve spaghetti immediately.
