The Italian recipe of the week: hamburger of fried codfish
In the Central and South Italy people use to fry mostly vegetables and fish. I want to propose you today a very simple and tasty recipe with fried codfish.
Ingredients for 4 persons:
400 gr. fillet of soaked codfish
100 gr. white flour
2 eggs
oil for frying
pot herbs
Mince the fillet of cod and mix with a spoon of minced pot hebs (parsley, marjoram, thyme) . Then make 4 hamburgers and flour them very well. Prepare the baking mixture with eggs, 100 gr. flour, some spoon of milk, one spoon of minced herbs, salt and pepper. Dip hamburgers in this mixture and fry them in abundant very hot oil. Drip them and dish out immediately. Buon appetito!
Nota bene: Dry codfish is already salted, I suggest you to add a very litte quantity of salt if necessary.
